GRAPES: 100% Evmolpia – an indigenous red Bulgarian grape variety created in 1991 by crossing Merlot and Mavrud.
WINEMAKING: The grapes are picked in September 2019 from Tsarev Brod winery’s own vineyards near the city of Shumen, Danube plain, North Eastern Black Sea coast of Bulgaria. The grapes are crushed and fermented at controlled temperature of 14-16° in small stainless steel tanks for 30 days. The wine was aged on its lees for five months and then bottled at the end of March 2020.
