The crimson color is very vivid. The aroma is intensive with fruit accents of red forest fruits, dried leaves and spices. The wine structure is well balanced, juicy with sweet notes in the aftertaste.
For SARVA 2013 we selected from the good rows of grapes massif in Belashica and Gorno Belevo.
The three sorts are hand-picked in cassettes. Two stages sorting is done for eliminating all substandard grapes and bunches. The fermentation is done separately for each sort in 5 tons inox tanks. To obtain very clear fruit aroma a 7 days mecetration is run for the grape pulp under 8°C.
The stormy fermentation lasts for 12 days and the wine is preserved with the solid parts for 10 days more. After the malolactic fermentation, the wine coupage is formed Wine was bottled in may 2015.
