Ageing: 18 months in new Bulgarian oak barrels
Winemaking: Hand-picking of the grapes in the middle of September. Amarone style of wine making - the grapes are sorted and then dried for two months in open and well-ventilated place achieving a natural concentration of sugars, acidity, colour and flavours, before crushing, whole bunch fermentation and oak maturation.
Tasting Notes: Exclusively extractive and full-bodied wine. Complex fruity-spicy aroma with notes of vanilla, chocolate and dried fruits. Rich and balanced taste with velvety tannins and extremely long finish.
Food Match: Roast beef, steaks, venison, mature cheeses.
