GRAPE VARIETIES: A blend of 58% Marsanne, 22 % Roussanne and 20 % Viognier
VINEYARD: Selected plots from Domaine Bessa Valley’s own vineyards near Ognyanovo village
WINEMAKING: All the grapes are nad picked between 23rd and 26th Aug 2019 at optimal ripeness with vigorous quality control in the vineyard. This is followed by soft destemming and quality separation of the whole berries on vibrating table, then direct pressing with pneumatic press machine in order to reach the desired juice characteristics of colour, total acidity and phenols. The alcoholic fermentation lasts about 20 days at controlled maximum temperature of 14-16 ⁰C , each varietal is fermented separately. Batonnage on heavy lees is performed for 3-5 months under CO2. The whole winemaking is finalized by blending, stabilization, filtering and bottling.
COLOUR: Intense straw yellow colour.
NOSE: Pronounced notes of pears, apricots, quince, melon and lime.
PALATE: Round and soft body, great texture and balanced acidity, ending with lovely finesse at the finish.
FOOD MATCH: Roast chicken, fish dishes, Asian food.
