The King is here, the King is here! Love will never ever leave! Kralj Zarić (King Zarić) is a very unique plum rakija – the result from years of hard work by the master distiller of Zarić distillery. It is distilled from plum wines made of the 3 best local Serbian plum varieties Požegača, Ranka and Trnovača. The entire amount of plums is hand-processed. The stones are removed by hand and then the process of white wine making is used where the must is separated immediately after mashing from the solid part of the grapes, here from the solid part of the plum. The wine obtained in this way must be controlled from day to day (almost from hour to hour) and when the right time comes it must go to distillation immediately. During the first distillation performed through the copper cauldron a soft wine distillate with a strength of up to 30% abv is produced. Then it is distilled again by fractional distillation (so all harmful substances are separated for human health benefits) and a pure wine distillate with a strength of over 74.0% vol is produced. As such, it is aged in oak barrels with a volume of 220 liters. The aging period in the oak barrel (obligatorily from the Kosjerić area) must not be less than 3 years. The distillate is then gradually diluted to the desired strength. It showed that at 40% abv KRALJ exhibits the best aromas and is completely rounded. Over 3000 wine samples and as many distillates were produced until the best result was reached, and the best result is the KRALJ himself - a unique and fiery drink. Due to the complexity and precision of production, KRALJ is produced in extremely small and limited series. The fact that it is produced by plum wine and not by plum mash is absolutely revolutionary for the rakija production process making it effectively a plum brandy produced in the same way as French cognac. In the year 2020 only 500 bottles were made and bottled in special Swarovski crystal bottles.
